Berry pudding recipe

Ingredients (nutrition)

  • soften butter for greasing
  • 4 eggs
  • 2 oz caster sugar
  • 1 oz flour
  • 5 fl oz double cream
  • 5 fl oz milk
  • 1 1/2 teaspoons vanilla essence
  • 8 1/2 oz icing sugar
  • 1 lb mixed red berries

Preparation (instructions)

  1. Lightly grease 8 ramekins with butter.
  2. In a mixing bowl, beat egg yolks and sugar until light and fold in flour. Set aside.
  3. In a saucepan, add cream and milk.
  4. Bring to boil and pour into flour mixture bowl.
  5. Stir well and return to pan, cook gently for 2 1/4 minutes until smooth and thick.
  6. Transfer into a bowl and stir in vanilla essence. Cover meringue with cling film and allow to cool.
  7. In a heatproof bowl, combine egg whites and 8 oz icing sugar over a pan of simmering water.
  8. Whisk for 8 minutes until thick, remove custard from heat and whisk until cool.
  9. Spoon equally mixed red berries in individual ramekin.
  10. Combine together meringue and custard and spoon on top of berries.
  11. Chill in refrigerator for 8 hours until set.
  12. Preheat oven to 425 degree F.
  13. Place chilled ramekins on a baking tray and dust with remaining icing sugar.
  14. Bake in preheated oven for 18-22 minutes.
  15. Serve hot.
