Ingredients (nutrition)
- soften butter for greasing
- 4 eggs
- 2 oz caster sugar
- 1 oz flour
- 5 fl oz double cream
- 5 fl oz milk
- 1 1/2 teaspoons vanilla essence
- 8 1/2 oz icing sugar
- 1 lb mixed red berries
Preparation (instructions)
- Lightly grease 8 ramekins with butter.
- In a mixing bowl, beat egg yolks and sugar until light and fold in flour. Set aside.
- In a saucepan, add cream and milk.
- Bring to boil and pour into flour mixture bowl.
- Stir well and return to pan, cook gently for 2 1/4 minutes until smooth and thick.
- Transfer into a bowl and stir in vanilla essence. Cover meringue with cling film and allow to cool.
- In a heatproof bowl, combine egg whites and 8 oz icing sugar over a pan of simmering water.
- Whisk for 8 minutes until thick, remove custard from heat and whisk until cool.
- Spoon equally mixed red berries in individual ramekin.
- Combine together meringue and custard and spoon on top of berries.
- Chill in refrigerator for 8 hours until set.
- Preheat oven to 425 degree F.
- Place chilled ramekins on a baking tray and dust with remaining icing sugar.
- Bake in preheated oven for 18-22 minutes.
- Serve hot.
