Bread pudding recipe

Ingredients (nutrition)

  • 3 oz ghee
  • 6 slices white bread, cut into quarters
  • 5 oz sugar
  • 10 fl oz water
  • 3 green cardamom pods, with husks removed
  • 1 pt milk
  • 6 fl oz evaporated milk
  • 1 teaspoon saffron threads

Preparation (instructions)

  1. Melt ghee in a non stick pan and fry bread slices until golden brown.
  2. Remove, drain on kitchen paper towel and transfer to heatproof dish. Set aside.
  3. To make the syrup, add sugar, water and cardamom seeds in a saucepan.
  4. Bring to boil with constant stirring until sugar dissolves and thickens.
  5. Spoon syrup over reserved bread.
  6. In a separate saucepan, add milk, evaporated milk and saffron.
  7. Bring to boil, reduce heat and simmer until liquid evaporates to half the amount.
  8. Pour over to syrup bread.
  9. Serve instantly.
