Ingredients (nutrition)
- 5 oz flour
- 3/4 oz icing sugar
- 4 oz butter, cut into cubes
- 2 1/2 oz ground almonds
- 3 tablespoons chilled water
- 1 1/2 lb pitted cherries
- 1 lightly beaten egg
- caster sugar for sprinkling
Preparation (instructions)
- In a mixing bowl, add flour and icing sugar.
- Rub butter at fingertips and mix with flour mixture until looks like breadcrumbs.
- Stir in ground almonds and water in the mixture until forms a dough.
- Transfer dough on a floured work surface and make into a ball.
- Roll out into a circle about 10 inches diameter on a baking parchment.
- Flatten slightly, cover with cling film and chill in refrigerator for 25 minutes.
- Preheat oven to 400 degree F.
- Spread cherries at the bottom of a greased pie dish.
- Cover pie dish with pastry and trim excess edge.
- Brush pastry top with beaten egg and dust with caster sugar.
- Place pie dish on a baking tray and bake in preheated oven for 38 minutes.
- Serve warm.
