Cherry pie recipe

Ingredients (nutrition)

  • 5 oz flour
  • 3/4 oz icing sugar
  • 4 oz butter, cut into cubes
  • 2 1/2 oz ground almonds
  • 3 tablespoons chilled water
  • 1 1/2 lb pitted cherries
  • 1 lightly beaten egg
  • caster sugar for sprinkling

Preparation (instructions)

  1. In a mixing bowl, add flour and icing sugar.
  2. Rub butter at fingertips and mix with flour mixture until looks like breadcrumbs.
  3. Stir in ground almonds and water in the mixture until forms a dough.
  4. Transfer dough on a floured work surface and make into a ball.
  5. Roll out into a circle about 10 inches diameter on a baking parchment.
  6. Flatten slightly, cover with cling film and chill in refrigerator for 25 minutes.
  7. Preheat oven to 400 degree F.
  8. Spread cherries at the bottom of a greased pie dish.
  9. Cover pie dish with pastry and trim excess edge.
  10. Brush pastry top with beaten egg and dust with caster sugar.
  11. Place pie dish on a baking tray and bake in preheated oven for 38 minutes.
  12. Serve warm.
