Coconut rice pudding recipe

Ingredients (nutrition)

  • 4 oz short grain rice
  • 1 pt coconut milk
  • 10 fl oz milk
  • 2 oz caster sugar
  • 1 1/2 teaspoons butter

Preparation (instructions)

  1. Lightly grease an ovenproof dish. Set aside.
  2. In a mixing bowl, combine together all ingredients except butter.
  3. Pour mixture into reserved ovenproof dish and dot mixture surface with butter.
  4. Bake in preheated oven for 28 minutes.
  5. Serve immediately.
