Ingredients (nutrition)
For Pancake Batter
- 4 oz flour
- pinch of salt
- 2 egg yolks
- 1 egg white
- 10 fl oz coconut milk
- 4 teaspoons sunflower oil
For Filling
- 1 sliced banana
- 1 sliced papaya
- juice of 1 lime
- 2 pulped passion fruit
- 1 diced mango
- 4 lychees, cut into halves
- 2 1/4 tablespoons honey
Preparation (instructions)
- To make pancake batter, add flour and salt into a mixing bowl and make a well in the centre.
- Add egg yolks, egg white, coconut milk and oil in the centre.
- Slowly draw flour into mixture and beat until for a smooth batter.
- Cover with cling film and chill in refrigerator for 40 minutes.
- Meanwhile, combine together pancake filling ingredients and mix well.
- In a non stick pan, lightly grease pan with butter and pour 2 1/2 tablespoons batter and twirl around.
- Cook for about 50 seconds and flip pancake to cook the other side.
- Spread fruit mixture onto pancake and roll up.
- Serve immediately.
