Fried banana fritters recipe

Ingredients (nutrition)

  • 4 oz plain flour
  • 1 1/2 tablespoons sugar
  • 1/2 teaspoon bicarbonate soda
  • pinch of salt
  • 1 egg
  • 5 1/2 tablespoons water
  • 2 1/2 tablespoons shredded coconut
  • sunflower oil for deep frying
  • 4 bananas, cut into half lengthways
  • vanilla ice cream

Preparation (instructions)

  1. In a mixing bowl, add flour, sugar, bicarbonate soda and salt.
  2. Whisk egg, water and coconut into the flour mixture to make a smooth batter.
  3. In a non stick frying pan, heat up oil.
  4. Coat bananas into batter and slowly place into hot oil.
  5. Fry until golden brown, remove and drain onto kitchen paper towel.
  6. Serve hot with vanilla ice cream.
