Griddle cakes recipe

Ingredients (nutrition)

  • 4 oz plain flour
  • 1 1/2 tablespoons caster sugar
  • 2 teaspoons baking powder
  • 2 eggs
  • 1 tablespoon melted butter
  • 4 fl oz milk
  • 2 oz pitted and chopped cherries
  • 2 oz chopped dried apricots
  • warm golden syrup

Preparation (instructions)

  1. In a mixing bowl, add flour, sugar and baking powder.
  2. Make a well in the centre and whisk in egg yolks, melted butter and milk to form a smooth batter.
  3. Fold in cherries and apricots into batter.
  4. Meanwhile, whisk egg whites until form stiff peaks.
  5. Fold in egg whites into batter.
  6. Heat and lightly grease griddle with some melted butter.
  7. Place a spoonful of batter on it and cook until golden, flip and cook the other side.
  8. Serve hot with golden syrup.
