Ingredients (nutrition)
- 4 oz plain flour
- 1 1/2 tablespoons caster sugar
- 2 teaspoons baking powder
- 2 eggs
- 1 tablespoon melted butter
- 4 fl oz milk
- 2 oz pitted and chopped cherries
- 2 oz chopped dried apricots
- warm golden syrup
Preparation (instructions)
- In a mixing bowl, add flour, sugar and baking powder.
- Make a well in the centre and whisk in egg yolks, melted butter and milk to form a smooth batter.
- Fold in cherries and apricots into batter.
- Meanwhile, whisk egg whites until form stiff peaks.
- Fold in egg whites into batter.
- Heat and lightly grease griddle with some melted butter.
- Place a spoonful of batter on it and cook until golden, flip and cook the other side.
- Serve hot with golden syrup.
