Ingredients (nutrition)
- 6 oz butter
- 6 oz muscovado sugar
- 11 oz marmalade
- 2 seedless thinly sliced oranges
- 3 eggs
- 6 oz self raising flour
- 2 teaspoons ground ginger
- 2 oz finely chopped root ginger
Preparation (instructions)
- Preheat oven to 375 degree F.
- Line bottom of 9 inches round cake mould with non stick baking parchment. Set aside.
- In a saucepan, slightly warm 2 oz butter, 2 oz sugar and 5 1/2 oz marmalade.
- Spoon into mould and top with orange slices. Set aside.
- In a bowl, beat remaining butter, remaining sugar and eggs until light and creamy.
- Slowly fold in flour, ground ginger, remaining marmalade and chopped ginger.
- Pour into the reserved cake mould and place on a baking tray.
- Bake in preheated oven for 1 1/4 hours.
- Serve warm.
