Marmalade pudding recipe

Ingredients (nutrition)

  • 6 oz butter
  • 6 oz muscovado sugar
  • 11 oz marmalade
  • 2 seedless thinly sliced oranges
  • 3 eggs
  • 6 oz self raising flour
  • 2 teaspoons ground ginger
  • 2 oz finely chopped root ginger

Preparation (instructions)

  1. Preheat oven to 375 degree F.
  2. Line bottom of 9 inches round cake mould with non stick baking parchment. Set aside.
  3. In a saucepan, slightly warm 2 oz butter, 2 oz sugar and 5 1/2 oz marmalade.
  4. Spoon into mould and top with orange slices. Set aside.
  5. In a bowl, beat remaining butter, remaining sugar and eggs until light and creamy.
  6. Slowly fold in flour, ground ginger, remaining marmalade and chopped ginger.
  7. Pour into the reserved cake mould and place on a baking tray.
  8. Bake in preheated oven for 1 1/4 hours.
  9. Serve warm.
