Oat & fruit pudding recipe

Ingredients (nutrition)

  • 4 oz rolled oats
  • 2 oz melted butter
  • 3 1/2 tablespoons chopped almonds
  • 1 tablespoon honey
  • pinch of ground cinnamon
  • 2 finely chopped pears
  • 1 tablespoon marmalade
  • 4 tablespoons yogurt

Preparation (instructions)

  1. Preheat oven to 400 degree F.
  2. Lightly grease 4 pudding bowls and line with small rounds of baking parchment.
  3. In a bowl, combine oats, butter, almonds, honey and cinnamon.
  4. Spread 2/3 of the mixture on the base and sides of pudding bowls.
  5. In a bowl, mix well pears and marmalades and pour into remaining oat mixture.
  6. Add the pear mixture into the pudding bowls.
  7. Bake in preheated oven for 18 minutes.
  8. Allow to cool slightly and serve with yogurt.
