Ingredients (nutrition)
- 2 eggs
- 1 cup sugar
- 2/3 cup flour
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 2 cups chopped pears
- 1 1/2 cups chopped walnuts
- 2 1/2 teaspoons lemon juice
- 1/2 cup flaked coconut
- whipped cream for topping
Preparation (instructions)
- Preheat oven to 350 degree F.
- Lightly grease square baking dish with some melted butter. Set aside.
- In a large mixing bowl, beat eggs and sugar until light and fluffly.
- Fold in flour, baking powder and salt into the egg mixture.
- Stir in pears, walnuts and lemon juice.
- Pour pudding mixture over prepared baking dish.
- Scatter coconut on top and bake for 35-35 minutes.
- Allow to cool slightly and cut into squares with whipped cream to top.
