Pear walnut pudding recipe

Ingredients (nutrition)

  • 2 eggs
  • 1 cup sugar
  • 2/3 cup flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 cups chopped pears
  • 1 1/2 cups chopped walnuts
  • 2 1/2 teaspoons lemon juice
  • 1/2 cup flaked coconut
  • whipped cream for topping

Preparation (instructions)

  1. Preheat oven to 350 degree F.
  2. Lightly grease square baking dish with some melted butter. Set aside.
  3. In a large mixing bowl, beat eggs and sugar until light and fluffly.
  4. Fold in flour, baking powder and salt into the egg mixture.
  5. Stir in pears, walnuts and lemon juice.
  6. Pour pudding mixture over prepared baking dish.
  7. Scatter coconut on top and bake for 35-35 minutes.
  8. Allow to cool slightly and cut into squares with whipped cream to top.
