Queen of puddings recipe

Ingredients (nutrition)

  • 2 oz dark chocolate, broken into pieces
  • 18 fl oz chocolate milk
  • 4 oz white breadcrumbs
  • 4 oz caster sugar
  • 2 eggs
  • 4 1/2 tablespoons black cherry jam

Preparation (instructions)

  1. Preheat oven to 350 degree F.
  2. In a saucepan, melt chocolate pieces and chocolate milk.
  3. Remove from heat and set aside.
  4. In a large mixing bowl, combine breadcrumbs, 1 oz sugar and chocolate mixture.
  5. Whisk in egg yolks with mixture and transfer into an ovenproof pie dish.
  6. Bake in preheated oven for 28 minutes.
  7. Meanwhile, whisk egg whites until form soft peaks and slowly whisk in remaining sugar until form meringue.
  8. Spread cherry jam on baked chocolate and add meringue on top.
  9. Return to oven and bake for a further 13 minutes.
  10. Serve hot.
