Rice pudding souffle recipe

Ingredients (nutrition)

  • 2 oz short grain rice
  • 1 1/4 pt skimmed milk
  • 2 1/2 tablespoons honey
  • 1 1/2 teaspoons vanilla essence
  • 2 egg whites
  • 1 1/2 teaspoons grated nutmeg

Preparation (instructions)

  1. In a saucepan, add rice, milk and honey.
  2. Bring to boil, reduce heat, cover and simmer for 1 hour.
  3. Add vanilla essence and set aside.
  4. Preheat oven to 425 degree F.
  5. In a bowl, whisk egg whites until form soft peaks.
  6. Fold egg whites into rice mixture.
  7. Transfer into an ovenproof dish and top with nutmeg.
  8. Bake into preheated oven for 18 minutes.
  9. Serve immediately.
