Semolina recipe

Ingredients (nutrition)

  • 6 tablespoons pure ghee
  • 3 whole cardamom pods
  • 3 whole cloves
  • 8 tablespoons coarse semolina
  • 2 oz sultanas
  • 4 1/2 oz caster sugar
  • 1 teaspoon saffron threads
  • 10 fl oz milk
  • 10 fl oz water

Preparation (instructions)

  1. Melt ghee in a saucepan under medium heat.
  2. Add cardamom pods and cloves.
  3. Reduce heat to low and mix well.
  4. Stir in semolina and stir fry until slightly darker and add in sultanas, sugar and saffron. Mix well.
  5. Pour in milk and water and cook until semolina softens.
  6. Remove from heat and serve immediately.
