Ingredients (nutrition)
- 6 oz plain flour
- 4 oz sugar
- 2 teaspoons ground ginger
- 1 teaspoons baking powder
- 5 oz breadcrumbs
- 4 oz currants
- 4 oz grated suet
- 2 1/2 oz sultanas
- 3 teaspoons grated lemon zest
- 2 lightly beaten eggs
- 6 fl oz milk
Preparation (instructions)
- In a large mixing bowl, add all ingredients except eggs and milk.
- Mix well mixture and add in eggs and milk.
- Place a sheet of baking paper on a work board and roll mixture into 8 1/2 inches long.
- Roll up pudding in the baking paper and fold up ends.
- Wrap with a tea towel and place on top of a steamer, cover and steam for 1 3/4 hours.
- Serve hot with cream.
