Ingredients (nutrition)
- 2 1/2 teaspoons olive oil
- 1 chopped onion
- 3 finely chopped garlic cloves
- 1 lb chopped plum tomatoes
- 4 tablespoons dry white wine
- 1 teaspoon tomato puree
- salt and ground black pepper to taste
- 4 1/2 tablespoons chopped parsley
- 4 cod cutlets
- 2 1/2 tablespoons dried breadcrumbs
Preparation (instructions)
- Preheat oven to 375 degree F.
- Heat oil and sweat onion for 4 minutes in a frying pan.
- Add garlic, tomatoes, wine, tomato puree, salt and pepper.
- Bring to boil, reduce heat, uncover and cook for 18 minutes.
- Stir in parsley and set aside.
- Place fish on a lightly greased baking tray and spoon tomato mixture over the fish.
- Top with breadcrumbs and bake fish in preheated oven for 25 minutes.
- Serve hot with salad and boiled potatoes.
