Ingredients (nutrition)
- 2 1/2 tablespoons vegetable oil
- 3 chopped garlic cloves
- 3 onions, sliced into rings
- 3 courgettes, cut into sticks
- 3 1/2 tablespoons thyme leaves
- 8 sardine fillets
- 3 oz grated Parmesan cheese
- 4 lightly beaten eggs
- 5 fl oz milk
- salt and ground black pepper to taste
Preparation (instructions)
- Preheat oven to 350 degree F.
- Heat 1 tablespoon of oil in a frying pan.
- Saute garlic and onions for 2 1/2 minutes. Set aside.
- In the same pan, add courgettes and cook for 4 1/2 minutes.
- Add 2 1/2 tablespoons thyme and give a quick stir.
- Place half the amount onion and half the amount courgettes in an ovenproof dish.
- Place sardine and half amount of cheese.
- Put remaining onions and courgettes.
- Top with remaining thyme.
- In a bowl, combine eggs, milk, salt and pepper.
- Pour over in the ovenproof dish content and top with remaining cheese.
- Bake in preheated oven for 23 minutes.
- Serve hot.
