Easy baked sardines recipe

Ingredients (nutrition)

  • 2 1/2 tablespoons vegetable oil
  • 3 chopped garlic cloves
  • 3 onions, sliced into rings
  • 3 courgettes, cut into sticks
  • 3 1/2 tablespoons thyme leaves
  • 8 sardine fillets
  • 3 oz grated Parmesan cheese
  • 4 lightly beaten eggs
  • 5 fl oz milk
  • salt and ground black pepper to taste

Preparation (instructions)

  1. Preheat oven to 350 degree F.
  2. Heat 1 tablespoon of oil in a frying pan.
  3. Saute garlic and onions for 2 1/2 minutes. Set aside.
  4. In the same pan, add courgettes and cook for 4 1/2 minutes.
  5. Add 2 1/2 tablespoons thyme and give a quick stir.
  6. Place half the amount onion and half the amount courgettes in an ovenproof dish.
  7. Place sardine and half amount of cheese.
  8. Put remaining onions and courgettes.
  9. Top with remaining thyme.
  10. In a bowl, combine eggs, milk, salt and pepper.
  11. Pour over in the ovenproof dish content and top with remaining cheese.
  12. Bake in preheated oven for 23 minutes.
  13. Serve hot.
