Ingredients (nutrition)
- 2 fl oz vegetable oil
- 5 finely chopped garlic cloves
- 1 finely chopped large onion
- 8 oz tomato puree
- 5 fl oz red wine
- 7 oz cooked canned clams with juice
- 1 lb dried white breadcrumbs
- 1 1/2 tablespoons grated Parmesan cheese
- 1 tablespoon chopped parsley
- 2 teaspoons dried oregano
- 1 teaspoon garlic salt
- 4 lobsters, cut into halves with intestines removed
Preparation (instructions)
- Preheat oven to 400 degree F.
- Heat oil in a frying pan.
- Sweat garlic and onion under medium heat for 4-5 minutes.
- Pour in tomato puree and cook for 3 1/2 minutes.
- Stir in wine, clams and its juice and cook for 5 1/4 minutes. Set aside.
- Combine together breadcrumbs, cheese, parsley oregano and garlic salt in a large glass bowl.
- Make a well in the centre and pour in reserved sauce.
- Stir and make into soft dough.
- Stuff mixture into the lobster cavity and place on a lightly greased baking tray.
- Bake in preheated oven for 50 minutes.
- Serve hot with cold salad.
