Ingredients (nutrition)
- 3 1/2 tablespoons olive oil
- 2 1/2 teaspoons Thai fish sauce
- 2 crushed garlic cloves
- grated zest of 1 lime
- 1 teaspoon grated root ginger
- 2 tablespoons chopped basil
- salt and ground black pepper to taste
- 1 1/2 lb monkfish fillet, cut bite size cubes
- 3 limes, cut into wedges
Preparation (instructions)
- Combine well first 7 ingredients in the list in a mixing bowl.
- Add fish to the marinade, cover with cling film and chill for at least 3 hours.
- Preheat charcoal barcecue to hot.
- Thread marinated fish and lime wedges alternately on skewers.
- Barbecue fish skewers for 5 1/2 minutes.
- Serve hot with roasted potatoes and vegetables.
