Bbq monkfish recipe

Ingredients (nutrition)

  • 3 1/2 tablespoons olive oil
  • 2 1/2 teaspoons Thai fish sauce
  • 2 crushed garlic cloves
  • grated zest of 1 lime
  • 1 teaspoon grated root ginger
  • 2 tablespoons chopped basil
  • salt and ground black pepper to taste
  • 1 1/2 lb monkfish fillet, cut bite size cubes
  • 3 limes, cut into wedges

Preparation (instructions)

  1. Combine well first 7 ingredients in the list in a mixing bowl.
  2. Add fish to the marinade, cover with cling film and chill for at least 3 hours.
  3. Preheat charcoal barcecue to hot.
  4. Thread marinated fish and lime wedges alternately on skewers.
  5. Barbecue fish skewers for 5 1/2 minutes.
  6. Serve hot with roasted potatoes and vegetables.
