Ingredients (nutrition)
- 4 oz self raising flour
- 1 lightly beaten egg
- 5 fl oz milk
- 8 oz soaked overnight salted cod in cold water
- 1 finely chopped fennel bulb
- 1 finely chopped red onion
- 1 finely chopped red chili
- 2 1/2 tablespoons vegetable oil
Preparation (instructions)
- Add flour in a large mixing bowl.
- Make a well in the middle and pour in egg.
- Slowly combine with flour while gradually add milk to form a batter.
- Allow to set for 12 minutes.
- Meanwhile, drain cod and rinse with cold water.
- Remove skin, bones and mash fish flesh to make into cod flakes.
- Mix well fish flakes, fennel, onion, chili and reserved batter.
- Heat oil in a frying pan and take spoonfuls of mixture and place in the hot oil.
- Cook fritters for about 6 minutes until golden brown.
- Serve hot with tomato ketchup or chili sauce.
