For Fish
- 2 oz melted butter
- 2 lb minced cod fillets
- 2 lightly beaten eggs
- 1 chopped onion
- 2 tablespoons sour cream
- 2 tablespoons breadcrumbs
- 3/4 teaspoon salt
For Sauce:
- 1 oz butter
- 1 finely chopped onion
- 1 tablespoon flour
- 10 fl oz milk
- 1 1/2 teaspoons lemon juice
- 8 oz sliced mushrooms
- salt and ground black pepper to taste
- 1 tablespoon sour cream
Preparation (instructions)
- Preheat oven to 350 degree F.
- Grease loaf tin with some butter.
- In a large mixing bowl, combine melted butter, cod, eggs, onion, sour cream, breadcrumbs and salt.
- Add mixture into greased loaf tin.
- Bake in preheated ovens for 40-45 minutes.
- To make the sauce, melt butter in a saucepan.
- Sweat onion until softens.
- Add flour and cook for 1 1/4 minutes.
- Add milk, lemon juice, mushrooms, salt and pepper.
- Cook until sauce thickens.
- Just before serving, stir in sour cream.
- Serve fish loaf with sauce.
