Fish loaf recipe

Ingredients (nutrition)

For Fish

  • 2 oz melted butter
  • 2 lb minced cod fillets
  • 2 lightly beaten eggs
  • 1 chopped onion
  • 2 tablespoons sour cream
  • 2 tablespoons breadcrumbs
  • 3/4 teaspoon salt

For Sauce:

  • 1 oz butter
  • 1 finely chopped onion
  • 1 tablespoon flour
  • 10 fl oz milk
  • 1 1/2 teaspoons lemon juice
  • 8 oz sliced mushrooms
  • salt and ground black pepper to taste
  • 1 tablespoon sour cream

Preparation (instructions)

  1. Preheat oven to 350 degree F.
  2. Grease loaf tin with some butter.
  3. In a large mixing bowl, combine melted butter, cod, eggs, onion, sour cream, breadcrumbs and salt.
  4. Add mixture into greased loaf tin.
  5. Bake in preheated ovens for 40-45 minutes.
  6. To make the sauce, melt butter in a saucepan.
  7. Sweat onion until softens.
  8. Add flour and cook for 1 1/4 minutes.
  9. Add milk, lemon juice, mushrooms, salt and pepper.
  10. Cook until sauce thickens.
  11. Just before serving, stir in sour cream.
  12. Serve fish loaf with sauce.
