Ingredients (nutrition)
- 2 lb fresh mussels, beards removed
- 3 1/2 tablespoons olive oil
- 1 chopped onion
- 3 finely chopped garlic cloves
- 2 1/2 teaspoons thyme leaves
- 5 fl oz red wine
- 2 lb chopped plum tomatoes
- 2 1/2 tablespoons chopped parsley
- salt and ground black pepper to taste
Preparation (instructions)
- Place mussels covered with water in a saucepan.
- Cook under high heat until mussels opened. Throw away mussels that remain closed.
- Strain but reserve the cooking liquid.
- Heat oil in a saucepan under low heat.
- Sweat onion for 9 minutes.
- Add garlic and thyme and cook for 50 seconds.
- Pour in wine and simmer until sauce thickens.
- Add tomatoes and reserved cooking liquid.
- Bring to boil, reduce heat, cover and simmer for 35 minutes.
- Uncover and cook for 12 minutes.
- Add mussels and cook for 4-5 minutes.
- Add parsley and season well with salt and pepper.
- Serve hot.
