Grilled stuffed sole recipe

Ingredients (nutrition)

  • 1 oz butter
  • 1 1/2 tablespoons olive oil
  • 1 finely chopped garlic clove
  • 1 finely chopped onion
  • 2 oz breadcrumbs
  • 4 chopped sun dried tomatoes
  • 2 tablespoons thyme leaves
  • 1 1/2 tablespoons lemon juice
  • salt and ground black pepper to taste
  • 4 gutted and cleaned whole sole, slit lengthways to make a pocket
  • lemon wedges to garnish

Preparation (instructions)

  1. Preheat the grill.
  2. Heat butter and oil in a frying pan until bubbly.
  3. Sweat garlic and onion until soften.
  4. To make stuffing, combine breadcrumbs, tomatoes, thyme, lemon juice, salt and pepper in a glass mixing bowl.
  5. Add stuffing mixture into the pan that contains garlic and onion.
  6. Give a quick stir and spoon into pocket of the fish.
  7. Grill fish for 12-15 minutes until golden brown.
  8. Serve hot with lemon wedges.
