Ingredients (nutrition)
- 2 1/2 tablespoons olive oil
- 1 1/2 chopped onions
- 12 oz vegetable juice
- 10 oz tomato sauce
- 1/4 teaspoon sweet paprika
- 1/4 teaspoon cayenne pepper
- 1/2 cup butter
- 5 lb diced lobster meat
- 1 cup cognac
Preparation (instructions)
- Heat olive oil until smoking hot.
- Add onions and fry until onion caramelized.
- Pour in vegetable juice, tomato sauce, paprika and cayenne pepper.
- Simmer gently for 8-10 minutes.
- Meanwhile, melt butter and add lobster meat in a skillet.
- Cook for 4 1/2 minutes and transfer to a casserole dish.
- Flame with cognac until flame dies.
- Transfer lobster to sauce and simmer for 13-15 minutes.
- Serve hot with noodles or rice.
