Lobster barraca recipe

Ingredients (nutrition)

  • 2 1/2 tablespoons olive oil
  • 1 1/2 chopped onions
  • 12 oz vegetable juice
  • 10 oz tomato sauce
  • 1/4 teaspoon sweet paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup butter
  • 5 lb diced lobster meat
  • 1 cup cognac

Preparation (instructions)

  1. Heat olive oil until smoking hot.
  2. Add onions and fry until onion caramelized.
  3. Pour in vegetable juice, tomato sauce, paprika and cayenne pepper.
  4. Simmer gently for 8-10 minutes.
  5. Meanwhile, melt butter and add lobster meat in a skillet.
  6. Cook for 4 1/2 minutes and transfer to a casserole dish.
  7. Flame with cognac until flame dies.
  8. Transfer lobster to sauce and simmer for 13-15 minutes.
  9. Serve hot with noodles or rice.
