Lobster thermidor recipe

Ingredients (nutrition)

  • 1 lobster, cut into half
  • salt and ground black pepper to taste
  • 3/4 cup olive oil
  • 3/4 cup fish stock
  • 3/4 cup white wine
  • 1 tablespoon chopped green onion
  • 1 tablespoon chopped tarragon
  • 1 cup bechamel sauce
  • 3/4 cup heavy cream
  • 2 lightly beaten egg yolks
  • 1 teaspoon dry mustard
  • 3 tablespoons grated Parmesan cheese
  • melted butter for brushing

Preparation (instructions)

  1. Season lobster with salt, pepper and brush with oil.
  2. Bake in oven for 425 degree F about 20 minutes.
  3. Remove lobster flesh and dice.
  4. In a saucepan, mix fish stock, wine, onion and tarragon.
  5. Cook until sauce thickens.
  6. Pour in sauce bechamel, cream and egg yolks.
  7. Slowly cook without boiling and stir in mustard.
  8. When sauce thickens, add lobster meat and heat through.
  9. Fill mixture into lobster shells and top with cheese.
  10. Brush with butter and cook in oven at 375 degree F until cheese melts.
  11. Serve hot.
