Ingredients (nutrition)
- 1 lobster, cut into half
- salt and ground black pepper to taste
- 3/4 cup olive oil
- 3/4 cup fish stock
- 3/4 cup white wine
- 1 tablespoon chopped green onion
- 1 tablespoon chopped tarragon
- 1 cup bechamel sauce
- 3/4 cup heavy cream
- 2 lightly beaten egg yolks
- 1 teaspoon dry mustard
- 3 tablespoons grated Parmesan cheese
- melted butter for brushing
Preparation (instructions)
- Season lobster with salt, pepper and brush with oil.
- Bake in oven for 425 degree F about 20 minutes.
- Remove lobster flesh and dice.
- In a saucepan, mix fish stock, wine, onion and tarragon.
- Cook until sauce thickens.
- Pour in sauce bechamel, cream and egg yolks.
- Slowly cook without boiling and stir in mustard.
- When sauce thickens, add lobster meat and heat through.
- Fill mixture into lobster shells and top with cheese.
- Brush with butter and cook in oven at 375 degree F until cheese melts.
- Serve hot.
