Monkfish & mussel skew recipe

Ingredients (nutrition)

  • 2 1/2 tablespoons lemon juice
  • 1 teaspoon olive oil
  • 1 teaspoon paprika
  • 1 crushed garlic clove
  • salt and ground black pepper to taste
  • 1 lb monkfish, cut into bite size cubes
  • 4 rashers turkey bacon, cut into halves
  • 8 cooked mussels
  • 8 peeled and deveined raw prawns
  • 1 tablespoon chopped dill

Preparation (instructions)

  1. Combine together lemon juice, oil, paprika, garlic, salt and pepper in a mixing bowl.
  2. Add monkfish, cover with cling film and chill for 25 minutes.
  3. Preheat grill to high.
  4. Wrap each turkey around each mussel.
  5. Thread turkey-mussel, fish and prawns alternately on skewers.
  6. Grill for 7 munutes.
  7. Sprinkle salt and chopped dill.
  8. Serve hot with garden salad.
