Oyster omelette recipe

Ingredients (nutrition)

  • 3 1/2 tablespoons butter
  • 1 tablespoon flour
  • 3 tablespoons cream
  • 12 coarsely chopped shucked oysters, with liquid reserved
  • salt and ground black pepper to taste
  • 8 eggs
  • 1 1/2 teaspoons chopped chives

Preparation (instructions)

  1. Melt butter in a saucepan under medium heat, stir in flour and cook for about 50 seconds.
  2. Stir in cream, oyster liquid and season well with salt and pepper.
  3. Cook for 2 1/2 minutes and add oysters.
  4. Simmer for 2 1/2 minutes.
  5. Whisk in eggs and chives and cook through.
  6. Serve immediately.
