Ingredients (nutrition)
- 3 1/2 tablespoons butter
- 1 tablespoon flour
- 3 tablespoons cream
- 12 coarsely chopped shucked oysters, with liquid reserved
- salt and ground black pepper to taste
- 8 eggs
- 1 1/2 teaspoons chopped chives
Preparation (instructions)
- Melt butter in a saucepan under medium heat, stir in flour and cook for about 50 seconds.
- Stir in cream, oyster liquid and season well with salt and pepper.
- Cook for 2 1/2 minutes and add oysters.
- Simmer for 2 1/2 minutes.
- Whisk in eggs and chives and cook through.
- Serve immediately.
