Ingredients (nutrition)
For Salsa
- 2 plum tomatoes
- 1 diced mango
- 1 finely chopped large shallot
- juice of 1 lime
- 3 drops Tabasco sauce
- salt and ground black pepper to taste
For Scallops
- 2 tablespoons olive oil
- 1/2 oz butter
- 8 scallops
Preparation (instructions)
- To make salsa, soak tomatoes in boiling water to peel off the skin and dice the tomato flesh.
- Add tomato flesh and remaining salsa ingredients in a mixing bowl.
- Cover with cling film and refrigerate until it is needed.
- Heat oil and butter in a frying pan.
- Add scallops and cook until scallops are lightly browned and firm.
- Spoon salsa on serving plates and top with scallops.
- Serve hot.
