Pan fried scallops recipe

Ingredients (nutrition)

For Salsa

  • 2 plum tomatoes
  • 1 diced mango
  • 1 finely chopped large shallot
  • juice of 1 lime
  • 3 drops Tabasco sauce
  • salt and ground black pepper to taste

For Scallops

  • 2 tablespoons olive oil
  • 1/2 oz butter
  • 8 scallops

Preparation (instructions)

  1. To make salsa, soak tomatoes in boiling water to peel off the skin and dice the tomato flesh.
  2. Add tomato flesh and remaining salsa ingredients in a mixing bowl.
  3. Cover with cling film and refrigerate until it is needed.
  4. Heat oil and butter in a frying pan.
  5. Add scallops and cook until scallops are lightly browned and firm.
  6. Spoon salsa on serving plates and top with scallops.
  7. Serve hot.
