Prawn curry recipe

Ingredients (nutrition)

  • 1 teaspoon dried red chili flakes
  • 1/2 tablespoon coriander seeds
  • 1/2 tablespoon cumin seeds
  • 1/2 teaspoon black peppercorns
  • 1/2 teaspoon ground turmeric
  • seeds from 7 green cardamom pods
  • 3 oz desiccated coconut
  • 10 fl oz boiling milk
  • 1 finely chopped onion
  • 3 tablespoons vegetable oil
  • 1 chopped root ginger
  • 2 tablespoons Thai fish sauce
  • 2 lb peeled and deveined raw tiger prawns

Preparation (instructions)

  1. To make masala, add first 6 ingredients in a dry frying pan.
  2. Cook under low heat for 2 1/2 minutes and transfer to a mortar.
  3. Pound to a powdery form and set aside.
  4. In a large bowl, add coconut and milk and allow to steep for 18 minutes. Set aside.
  5. Sweat onion in oil in a saucepan.
  6. Add masala and cook for 2 1/2 minutes.
  7. Stir in ginger and strain coconut-milk mixture through a sieve.
  8. Simmer for 13 minutes and add fish sauce.
  9. Add prawns and cook for 5 1/2 minutes.
  10. Serve hot with aromatic rice or basmati rice.
