Ingredients (nutrition)
- 1 teaspoon dried red chili flakes
- 1/2 tablespoon coriander seeds
- 1/2 tablespoon cumin seeds
- 1/2 teaspoon black peppercorns
- 1/2 teaspoon ground turmeric
- seeds from 7 green cardamom pods
- 3 oz desiccated coconut
- 10 fl oz boiling milk
- 1 finely chopped onion
- 3 tablespoons vegetable oil
- 1 chopped root ginger
- 2 tablespoons Thai fish sauce
- 2 lb peeled and deveined raw tiger prawns
Preparation (instructions)
- To make masala, add first 6 ingredients in a dry frying pan.
- Cook under low heat for 2 1/2 minutes and transfer to a mortar.
- Pound to a powdery form and set aside.
- In a large bowl, add coconut and milk and allow to steep for 18 minutes. Set aside.
- Sweat onion in oil in a saucepan.
- Add masala and cook for 2 1/2 minutes.
- Stir in ginger and strain coconut-milk mixture through a sieve.
- Simmer for 13 minutes and add fish sauce.
- Add prawns and cook for 5 1/2 minutes.
- Serve hot with aromatic rice or basmati rice.
