Ingredients (nutrition)
- 2 fl oz vegetable oil
- 6 finely chopped rashers bacon
- 2 1/2 tablespoons plain flour
- 2 tablespoons sunflower oil
- 2 finely chopped onions
- 1 chopped red pepper
- 1 chopped green pepper
- 1/2 teaspoon cayenne pepper
- 16 trimmed okra, cut into halves
- 2 lb tomatoes
- 1 bay leaf
- 2 lb peeled and deveined raw prawns
- 1 teaspoon Tabasco sauce
- salt and ground black pepper to taste
Preparation (instructions)
- To make a roux, heat vegetable oil in a saucepan under medium heat.
- Add bacon and cook for 5 minutes.
- Add flour and stir until flour turns brown.
- Remove from pan and set aside.
- Heat sunflower oil in a saucepan.
- Add onions, red pepper, green pepper and cayenne pepper.
- Cook until onions turn brown.
- Add okra, tomatoes and bay leaf.
- Bring to boil, reduce heat and simmer for 25-30 minutes.
- Add roux, prawns, Tabasco sauce, salt and pepper.
- Cook for 5-6 minutes and serve hot.
