Prawn omelette recipe

Ingredients (nutrition)

  • 2 1/2 tablespoons canola oil
  • 2 sliced leeks
  • 4 tablespoons cornflour
  • 3/4 teaspoon salt
  • 12 oz peeled and deveined raw prawns
  • 7 oz beansprouts
  • 6 oz sliced mushrooms
  • 6 lightly beaten eggs with 2 1/2 tablespoons water

Preparation (instructions)

  1. Heat oil in a frying pan under medium heat.
  2. Stir fry leeks for 4 minutes.
  3. In a bowl, combine cornflour and salt.
  4. Dredge prawns in the flour mixture.
  5. Stir fry prawns in the frying pan for 1 1/2-2 minutes.
  6. Add bean sprouts and mushrooms, stir fry for 1 1/2 minutes.
  7. Pour egg mixture and cook, slowly turn the omelette and cook until egg sets.
  8. Serve hot.
