Ingredients (nutrition)
- 2 1/2 tablespoons canola oil
- 2 sliced leeks
- 4 tablespoons cornflour
- 3/4 teaspoon salt
- 12 oz peeled and deveined raw prawns
- 7 oz beansprouts
- 6 oz sliced mushrooms
- 6 lightly beaten eggs with 2 1/2 tablespoons water
Preparation (instructions)
- Heat oil in a frying pan under medium heat.
- Stir fry leeks for 4 minutes.
- In a bowl, combine cornflour and salt.
- Dredge prawns in the flour mixture.
- Stir fry prawns in the frying pan for 1 1/2-2 minutes.
- Add bean sprouts and mushrooms, stir fry for 1 1/2 minutes.
- Pour egg mixture and cook, slowly turn the omelette and cook until egg sets.
- Serve hot.
