Salmon with lemon mashed potatoes recipe

Ingredients (nutrition)

For Lemon Mashed Potatoes

  • 1 lb potatoes, cut into cubes
  • 1 oz butter
  • 2 tablespoons milk
  • grated zest of 1/2 lemon

For Sauce

  • 1 oz butter
  • 1 oz plain flour
  • 7 fl oz skimmed milk
  • finely grated zest of 1/2 lemon
  • 4 tablespoons chopped herbs
  • 1 finely chopped red pepper
  • 1 lightly beaten egg
  • salt and ground black pepper to taste

Preparation (instructions)

  1. To make the mashed potatoes, cook potatoes in boiling water for 18 minutes until tender.
  2. Drain and mash potatoes, stir in butter, milk and lemon zest. Set aside in a warm place.
  3. To make the sauce, melt butter in a saucepan under medium heat and stir in flour.
  4. Cook for 1 minute, remove from heat and pour in milk.
  5. Return to heat, bring to boil until sauce thickens.
  6. Add lemon zest, herbs, red pepper, egg, salt and pepper.
  7. Stir well and set aside.
  8. Cook salmon steak for 8-10 minutes until golden brown in a non stick pan.
  9. Transfer to a flameproof dish.
  10. Add sauce over the fish and put under hot grill until salmon is cooked through. Set aside in a warm place.
  11. Using a steamer, steam spinach for 7 minutes.
  12. Serve fish hot with mashed potatoes and spinach.
