For Lemon Mashed Potatoes
- 1 lb potatoes, cut into cubes
- 1 oz butter
- 2 tablespoons milk
- grated zest of 1/2 lemon
For Sauce
- 1 oz butter
- 1 oz plain flour
- 7 fl oz skimmed milk
- finely grated zest of 1/2 lemon
- 4 tablespoons chopped herbs
- 1 finely chopped red pepper
- 1 lightly beaten egg
- salt and ground black pepper to taste
Preparation (instructions)
- To make the mashed potatoes, cook potatoes in boiling water for 18 minutes until tender.
- Drain and mash potatoes, stir in butter, milk and lemon zest. Set aside in a warm place.
- To make the sauce, melt butter in a saucepan under medium heat and stir in flour.
- Cook for 1 minute, remove from heat and pour in milk.
- Return to heat, bring to boil until sauce thickens.
- Add lemon zest, herbs, red pepper, egg, salt and pepper.
- Stir well and set aside.
- Cook salmon steak for 8-10 minutes until golden brown in a non stick pan.
- Transfer to a flameproof dish.
- Add sauce over the fish and put under hot grill until salmon is cooked through. Set aside in a warm place.
- Using a steamer, steam spinach for 7 minutes.
- Serve fish hot with mashed potatoes and spinach.
