Ingredients (nutrition)
- 1/4 cup all purpose flour
- 1/2 teaspoon salt
- dash of cayenne pepper
- 3/4 cup butter
- 1/4 cup dry sherry
- 1 qt half and half
- 7 lightly beaten egg yolks
- 2 1/2 cups boiled lobster meat cut into bite sized
- 1 cup bread crumbs
Preparation (instructions)
- Preheat oven to 350 degree F.
- Mix well flour, salt and cayenne pepper in a bowl and set aside.
- Using a double boiler, melt butter and add flour mixture in with the melted butter.
- Stir until form a smooth paste and stir in sherry and half and half.
- Cook until heated through.
- In a bowl, take a spoonful of the hot mixture and combine with egg yolks.
- Add egg yolk mixture to the mixture in the double boiler.
- Cook and continue to stir until mixture thickens.
- Add lobster and cook until lobster is cooked through.
- Transfer mixture on a lightly greased ovenproof dish and top with breadcrumbs.
- Bake in preheated oven for 4-6 minutes.
- Serve immediately.
