Scalloped lobster with sherry sauce recipe

Ingredients (nutrition)

  • 1/4 cup all purpose flour
  • 1/2 teaspoon salt
  • dash of cayenne pepper
  • 3/4 cup butter
  • 1/4 cup dry sherry
  • 1 qt half and half
  • 7 lightly beaten egg yolks
  • 2 1/2 cups boiled lobster meat cut into bite sized
  • 1 cup bread crumbs

Preparation (instructions)

  1. Preheat oven to 350 degree F.
  2. Mix well flour, salt and cayenne pepper in a bowl and set aside.
  3. Using a double boiler, melt butter and add flour mixture in with the melted butter.
  4. Stir until form a smooth paste and stir in sherry and half and half.
  5. Cook until heated through.
  6. In a bowl, take a spoonful of the hot mixture and combine with egg yolks.
  7. Add egg yolk mixture to the mixture in the double boiler.
  8. Cook and continue to stir until mixture thickens.
  9. Add lobster and cook until lobster is cooked through.
  10. Transfer mixture on a lightly greased ovenproof dish and top with breadcrumbs.
  11. Bake in preheated oven for 4-6 minutes.
  12. Serve immediately.
