Ingredients (nutrition)
- 4 tablespoons olive oil
- 4 minced garlic cloves
- 3 finely sliced celery sticks
- 1 1/2 finely chopped carrot
- 1 finely chopped onion
- 1 finely chopped green pepper
- 9 fl oz tomato puree
- 1 lb chopped plum tomatoes
- 1 tablespoon chopped basil leaves
- 1 bay leaf
- 3/4 teaspoon salt
- 1/2 teaspoon ground black pepper
- 13 fl oz dry white wine
- 1 1/2 lb halibut steak, cut into bite size pieces
- 10 oz peeled and deveined raw prawns
- 10 oz scallops
- 12 mussels, beards removed
Preparation (instructions)
- Heat oil in a saucepan under medium heat.
- Add garlic, celery, carrot, onion and green pepper and saute for 18 minutes.
- Add tomato puree, tomatoes, basil leaf, bay leaf, salt and pepper.
- Increase heat and cook for 1 1/2 minutes.
- Reduce heat and simmer for 2 1/2 minutes.
- Pour in white wine and discard bay leaf.
- Add halibut, prawns and scallops.
- Simmer for 8-10 minutes.
- Place mussels on top, cover and steam until shells open and halibut flakes.
- Serve hot.
