Seafood chowder recipe

Ingredients (nutrition)

  • 4 tablespoons olive oil
  • 4 minced garlic cloves
  • 3 finely sliced celery sticks
  • 1 1/2 finely chopped carrot
  • 1 finely chopped onion
  • 1 finely chopped green pepper
  • 9 fl oz tomato puree
  • 1 lb chopped plum tomatoes
  • 1 tablespoon chopped basil leaves
  • 1 bay leaf
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 13 fl oz dry white wine
  • 1 1/2 lb halibut steak, cut into bite size pieces
  • 10 oz peeled and deveined raw prawns
  • 10 oz scallops
  • 12 mussels, beards removed

Preparation (instructions)

  1. Heat oil in a saucepan under medium heat.
  2. Add garlic, celery, carrot, onion and green pepper and saute for 18 minutes.
  3. Add tomato puree, tomatoes, basil leaf, bay leaf, salt and pepper.
  4. Increase heat and cook for 1 1/2 minutes.
  5. Reduce heat and simmer for 2 1/2 minutes.
  6. Pour in white wine and discard bay leaf.
  7. Add halibut, prawns and scallops.
  8. Simmer for 8-10 minutes.
  9. Place mussels on top, cover and steam until shells open and halibut flakes.
  10. Serve hot.
