Seafood kebabs recipe

Ingredients (nutrition)

  • 1 1/2 lb skinned salmon fillet, cut into bite size cubes
  • 12 scallops, cut into halves
  • 12 peeled and deveined raw prawns
  • 4 1/2 tablespoons lime juice
  • 2 1/2 tablespoons olive oil
  • 4 shredded basil leaves
  • salt and ground black pepper to taste
  • 6 bay leaves

Preparation (instructions)

  1. Mix well all kebabs ingredients except bay leaves in a large mixing bowl.
  2. Thread seafood alternately onto skewers and place a bay leaf to each skewer.
  3. Grill kebabs under medium grill for 9 minutes until evenly cooked.
  4. Meanwhile, prepare sauce by whisking ginger, lime juice, basil, butter, salt and pepper together.
  5. Boil wine until wine reduced to 2 1/2 tablespoons.
  6. Whisk wine into sauce and serve with hot kebabs.
