- 1 1/2 lb skinned salmon fillet, cut into bite size cubes
- 12 scallops, cut into halves
- 12 peeled and deveined raw prawns
- 4 1/2 tablespoons lime juice
- 2 1/2 tablespoons olive oil
- 4 shredded basil leaves
- salt and ground black pepper to taste
- 6 bay leaves
Preparation (instructions)
- Mix well all kebabs ingredients except bay leaves in a large mixing bowl.
- Thread seafood alternately onto skewers and place a bay leaf to each skewer.
- Grill kebabs under medium grill for 9 minutes until evenly cooked.
- Meanwhile, prepare sauce by whisking ginger, lime juice, basil, butter, salt and pepper together.
- Boil wine until wine reduced to 2 1/2 tablespoons.
- Whisk wine into sauce and serve with hot kebabs.
