Smoked fish with white sauce recipe

Ingredients (nutrition)

For Sauce

  • 1 pt milk
  • 1 onion, cut into half
  • 1 bay leaf
  • pinch of ground white pepper
  • 2 oz butter
  • 1 1/2 oz plain flour
  • salt and ground black pepper to taste
  • 1 1/2 tablespoons chopped parsley

For Fish

  • 2 lb haddock fillets, cut into bite size pieces
  • 8 fl oz milk
  • 8 fl oz water

Preparation (instructions)

  1. To make the white sauce, add milk, onion, bay leaf and white pepper in a saucepan.
  2. Simmer gently for 3 minutes.
  3. Remove from heat and allow to cool for 2 1/2 minutes.
  4. Strain into a jug through a sieve. Set aside.
  5. Melt butter in a pan under low heat.
  6. Add flour and cook for 1 1/4 minutes.
  7. Remove from heat and stir in milk mixture.
  8. Return to heat and cook until sauce thickens.
  9. Season well with salt and pepper and add in parsley. Set aside in a warm place.
  10. In a frying pan, add haddock, milk and water.
  11. Stir well, bring to boil, reduce heat and cook until fish easily flakes.
  12. Drain fish on kitchen paper towel.
  13. Spoon sauce over fish and serve instantly.
