Ingredients (nutrition)
For Sauce
- 1 pt milk
- 1 onion, cut into half
- 1 bay leaf
- pinch of ground white pepper
- 2 oz butter
- 1 1/2 oz plain flour
- salt and ground black pepper to taste
- 1 1/2 tablespoons chopped parsley
For Fish
- 2 lb haddock fillets, cut into bite size pieces
- 8 fl oz milk
- 8 fl oz water
Preparation (instructions)
- To make the white sauce, add milk, onion, bay leaf and white pepper in a saucepan.
- Simmer gently for 3 minutes.
- Remove from heat and allow to cool for 2 1/2 minutes.
- Strain into a jug through a sieve. Set aside.
- Melt butter in a pan under low heat.
- Add flour and cook for 1 1/4 minutes.
- Remove from heat and stir in milk mixture.
- Return to heat and cook until sauce thickens.
- Season well with salt and pepper and add in parsley. Set aside in a warm place.
- In a frying pan, add haddock, milk and water.
- Stir well, bring to boil, reduce heat and cook until fish easily flakes.
- Drain fish on kitchen paper towel.
- Spoon sauce over fish and serve instantly.
