Ingredients (nutrition)
- 3 sliced onions
- 2 teaspoons pimento berries
- 3/4 pt malt vinegar
- 2 1/2 lb red snapper
- juice of 2 limes
- 3 1/2 teaspoons ground black pepper
- 3 1/2 teaspoons salt
- 5 fl oz vegetable oil
Preparation (instructions)
- Mix together onions, berries and vinegar in a stainless steel saucepan.
- Simmer until onions tender and remove from heat. Set aside.
- Add lime juice, salt and pepper on snapper.
- Heat oil in a deep frying pan and fry fish until crispy.
- Transfer to a dish and pour vinegar mixture.
- Refrigerate for at 24 hours before serving.
