Smoked snapper recipe

Ingredients (nutrition)

  • 3 sliced onions
  • 2 teaspoons pimento berries
  • 3/4 pt malt vinegar
  • 2 1/2 lb red snapper
  • juice of 2 limes
  • 3 1/2 teaspoons ground black pepper
  • 3 1/2 teaspoons salt
  • 5 fl oz vegetable oil

Preparation (instructions)

  1. Mix together onions, berries and vinegar in a stainless steel saucepan.
  2. Simmer until onions tender and remove from heat. Set aside.
  3. Add lime juice, salt and pepper on snapper.
  4. Heat oil in a deep frying pan and fry fish until crispy.
  5. Transfer to a dish and pour vinegar mixture.
  6. Refrigerate for at 24 hours before serving.
