Ingredients (nutrition)
- 2 finely chopped onions
- 3 crushed garlic cloves
- 8 curry leaves
- 1 cinnamon stick, broken in half
- 1 crushed lemon grass stalk, with tough outer layer removed
- 1/2 teaspoon ground ginger
- 1 teaspoon ground turmeric
- 1 teaspoon chili powder
- 1 tablespoon curry powder
- 3 1/2 tablespoons lime juice
- 1 pt coconut milk
- salt to taste
- 3 tablespoons sunflower oil
- 2 lb small squid, cut into rings
- 1 teaspoon soft brown sugar
Preparation (instructions)
- To make the curry sauce, add all ingredients except oil, squid and brown sugar in a saucepan and bring to boil.
- Reduce heat, simmer for 40-45 minutes until sauce thickens.
- Meanwhile, heat oil in a large frying pan.
- Add squid rings and cook for 1 1/2 minutes.
- Add sugar and curry and cook for 4-5 minutes.
- Serve hot with white rice.
