Tuna Almondine recipe

Ingredients (nutrition)

  • vegetable oil for greasing
  • 4 fl oz cold water
  • 1 1/2 teaspoons powdered gelatine
  • 8 fl oz boiling water
  • 1 lb whipped low fat cottage cheese
  • 2 1/4 tablespoons lemon juice
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 12 oz tuna flakes
  • 3 oz finely chopped onions
  • 2 tablespoons chopped red pepper
  • 9 oz toasted almonds flakes

Preparation (instructions)

  1. Lightly grease fish mold with vegetable oil and set aside.
  2. In a bowl, add cold water and gelatine. Allow to set for 1 minute before adding boiling water.
  3. Stir until gelantine dissolves.
  4. Blend cheese with gelatine using a hand held mixer until form a smooth and creamy paste.
  5. Stir in lemon juice, garlic powder, salt, tuna flakes, onions, red pepper and half amount of almond flakes.
  6. Pour mixture in the fish mould, chill in refrigerator until firm.
  7. Garnish with remaining almond flakes before serving.
