Chicken stock recipe

Ingredients (nutrition)

  • 2 1/4 lb raw chicken carcass
  • 5 pt water
  • 4 oz coarsely chopped carrot
  • 4 oz coarsely chopped celery
  • 7 oz coarsely chopped onion
  • 3 garlic cloves
  • 1 teaspoon salt
  • 1 bouquet garni

Preparation (instructions)

  1. In a large pot, put all ingredients and bring to boil under high heat.
  2. Skim off any scum appears on the surface.
  3. When the scum stops forming, reduce heat, uncover and simmer for 2 hours.
  4. Strain through sieve and allow to cool before chill in refrigerator overnight.
