Ingredients (nutrition)
- 2 1/4 lb raw chicken carcass
- 5 pt water
- 4 oz coarsely chopped carrot
- 4 oz coarsely chopped celery
- 7 oz coarsely chopped onion
- 3 garlic cloves
- 1 teaspoon salt
- 1 bouquet garni
Preparation (instructions)
- In a large pot, put all ingredients and bring to boil under high heat.
- Skim off any scum appears on the surface.
- When the scum stops forming, reduce heat, uncover and simmer for 2 hours.
- Strain through sieve and allow to cool before chill in refrigerator overnight.
