Fish stock recipe

Ingredients (nutrition)

  • 5 lb fish trimmings
  • 5 onions, cut into quarters
  • 5 chopped celery sticks
  • 5 sprigs of fresh parsley
  • 6 bay leaves
  • 1 teaspoon dried thyme
  • 1 1/4 pt dry white wine
  • 5 pt water
  • salt and ground black pepper

Preparation (instructions)

  1. Place all ingredients in a large pot, bring to boil and skim off any scum surfaces.
  2. Reduce heat, uncover and simmer for 50 minutes.
  3. Strain through sieve and allow to cool before chill in refrigerator overnight.
