Ingredients (nutrition)
- 5 lb fish trimmings
- 5 onions, cut into quarters
- 5 chopped celery sticks
- 5 sprigs of fresh parsley
- 6 bay leaves
- 1 teaspoon dried thyme
- 1 1/4 pt dry white wine
- 5 pt water
- salt and ground black pepper
Preparation (instructions)
- Place all ingredients in a large pot, bring to boil and skim off any scum surfaces.
- Reduce heat, uncover and simmer for 50 minutes.
- Strain through sieve and allow to cool before chill in refrigerator overnight.
