Anchovy dip recipe

Ingredients (nutrition)

  • 4 oz anchovy fillets
  • 2 finely chopped garlic cloves
  • 1 tablespoon mayonnaise
  • ground black pepper to taste
  • 1 tablespoon olive oil
  • 2 1/2 tablespoons lemon juice
  • 1 1/2 tablespoons chopped parsley to garnish

Preparation (instructions)

  1. Soak anchovies in chilled water for 15 minutes, drain and dry with kitchen paper towel.
  2. Puree anchovies, garlic and mayonnaise in a food processor or electric blender until smooth and creamy.
  3. Season well with pepper.
  4. Stir in oil and lemon juice.
  5. Garnish with parsley and serve with toasted flat breads.
