Aubergine caviar recipe

Ingredients (nutrition)

  • 2 lb diced aubergines
  • 4 1/4 tablespoons sunflower oil
  • 2 garlic cloves
  • 1 teaspoon smoked paprika
  • ground black pepper to taste
  • 1 egg white
  • 3 large pitta breads
  • 2 tablespoons cumin seeds

Preparation (instructions)

  1. Preheat oven to 350 degree F.
  2. Steam aubergine in a steamer over a pan of boiling water for 35 minutes.
  3. Heat oil under medium heat in a saucepan.
  4. Stir in steamed aubergine, garlic, paprika and black pepper and cook for 12 minutes. Set aside.
  5. Brush egg white on pitta breads and sprinkle with cumin seeds.
  6. Bake pitta breads in preheated oven for 14 minutes.
  7. Serve bread with prepared aubergine caviar dip.
