Ingredients (nutrition)
- 2 lb diced aubergines
- 4 1/4 tablespoons sunflower oil
- 2 garlic cloves
- 1 teaspoon smoked paprika
- ground black pepper to taste
- 1 egg white
- 3 large pitta breads
- 2 tablespoons cumin seeds
Preparation (instructions)
- Preheat oven to 350 degree F.
- Steam aubergine in a steamer over a pan of boiling water for 35 minutes.
- Heat oil under medium heat in a saucepan.
- Stir in steamed aubergine, garlic, paprika and black pepper and cook for 12 minutes. Set aside.
- Brush egg white on pitta breads and sprinkle with cumin seeds.
- Bake pitta breads in preheated oven for 14 minutes.
- Serve bread with prepared aubergine caviar dip.
