Double cheese dip recipe

Ingredients (nutrition)

  • 1 seeded red pepper, cut into half
  • 1 seeded yellow pepper, cut into half
  • 4 oz dolcelatte cheese
  • 8 oz mascarpone cheese
  • 1 1/2 tablespoons lemon juice
  • 4 gherkins
  • salt and ground black pepper to taste

Preparation (instructions)

  1. Grill red and yellow peppers for 5 minutes and peel the skins.
  2. Finely chop the pepper flesh and set aside.
  3. Mash dolcelatte cheese in a bowl and add in mascarpone cheese, lemon juice, gherkins, chopped peppers and season well with salt and pepper.
  4. Chill in the refrigerator until it is needed.
