Ingredients (nutrition)
- 1 seeded red pepper, cut into half
- 1 seeded yellow pepper, cut into half
- 4 oz dolcelatte cheese
- 8 oz mascarpone cheese
- 1 1/2 tablespoons lemon juice
- 4 gherkins
- salt and ground black pepper to taste
Preparation (instructions)
- Grill red and yellow peppers for 5 minutes and peel the skins.
- Finely chop the pepper flesh and set aside.
- Mash dolcelatte cheese in a bowl and add in mascarpone cheese, lemon juice, gherkins, chopped peppers and season well with salt and pepper.
- Chill in the refrigerator until it is needed.
