Tomato sauce recipe

Ingredients (nutrition)

  • 10 fl oz white vinegar
  • 1 teaspoon mixed spice
  • 3 lb sliced tomatoes
  • 1 oz salt
  • 4 oz Demerara sugar

Preparation (instructions)

  1. Add vinegar and mixed spice in a saucepan.
  2. Bring to boil, remove from heat, cover and set aside for 3 1/2 hours.
  3. Simmer tomatoes in a separate saucepan until tomatoes become pulpy.
  4. Press tomato pulp through a sieve and return strained pulp to a saucepan.
  5. Season with salt, add sugar and prepared vinegar mixture.
  6. Mix well and simmer gently until sauce thickens.
  7. Store in hot sterilized air tight glass jar.
