Ingredients (nutrition)
- 10 fl oz white vinegar
- 1 teaspoon mixed spice
- 3 lb sliced tomatoes
- 1 oz salt
- 4 oz Demerara sugar
Preparation (instructions)
- Add vinegar and mixed spice in a saucepan.
- Bring to boil, remove from heat, cover and set aside for 3 1/2 hours.
- Simmer tomatoes in a separate saucepan until tomatoes become pulpy.
- Press tomato pulp through a sieve and return strained pulp to a saucepan.
- Season with salt, add sugar and prepared vinegar mixture.
- Mix well and simmer gently until sauce thickens.
- Store in hot sterilized air tight glass jar.
