Ingredients (nutrition)
- 12 wooden ice cream sticks
- 12 red apples
- 4 1/2 cups sugar
- 3/4 cup light corn syrup
- 1 teaspoon red food coloring
- 1 1/2 cups water
- 1 cup chopped peanuts
Preparation (instructions)
- Line baking sheet with parchment paper and set aside.
- Insert ice cream stick through each apple steam, leaving about 2 1/2 inches of the stick for holding.
- In a saucepan, mix sugar, corn syrup, food coloring and water under medium heat.
- Bring to a slow boil until all ingredients are dissolved.
- Place a candy thermometer into the saucepan until temperature records at 290 degree F.
- Remove from heat, dip apple in the syrup and coat with chopped peanuts.
- Place apples on baking sheet and allow to cool for 1 1/2 hours before serving.
