Dublin coddle recipe

Ingredients (nutrition)

  • 1 1/2 lb smoked ham, cut into bite size pieces
  • 1 1/2 lb pork sausage, cut into bite size pieces
  • 1 qt boiling water
  • 2 thinly diced yellow onions
  • 2 lb thickly sliced potatoes
  • 5 tablespoons chopped parsley
  • salt and ground black pepper to taste

Preparation (instructions)

  1. Add ham and sausage in boiling water for 6 minutes.
  2. Drain and reserve liquid.
  3. Transfer ham and sausage in a saucepan and add remaining ingredients.
  4. Add enough reserved liquid to cover content.
  5. Cover and simmer gently until liquid reduced by 1/2.
  6. Adjust seasoning if required.
  7. Serve hot.
