Ingredients (nutrition)
- 3 1/2 lb beef brisket
- 14 oz lager beer
- 2 cups water
- 10 black peppercorns
- 2 bay leaves
- 1/2 chopped parsley
- 2 teaspoons salt
- 1 1/2 tablespoons olive oil
- 2 cups chopped leeks (white parts only)
- 3 sliced garlic cloves
- 1 sliced yellow onion
- 3/4 lb carrots, cut into pieces
- 3/4 lb red potatoes
- 1 lb quartered turnips
- 2 lb green cabbage, cut in 6 and secure with toothpicks
- salt and ground black pepper to taste
Preparation (instructions)
- Place a deep casserole dish on top of the stove and stir in beef, beer, water, peppercorns, bay leaves, parsley and salt.
- Meanwhile, heat oil in a frying pan and saute leeks, garlic and onion for several minutes and stir into casserole.
- Cover pot and simmer for 3 1/4 hours.
- In the last 30 minutes, add in carrots and potatoes.
- In the last 10 minutes, add in remaining ingredients.
- Serve hot.
