Irish boiled dinner recipe

Ingredients (nutrition)

  • 3 1/2 lb beef brisket
  • 14 oz lager beer
  • 2 cups water
  • 10 black peppercorns
  • 2 bay leaves
  • 1/2 chopped parsley
  • 2 teaspoons salt
  • 1 1/2 tablespoons olive oil
  • 2 cups chopped leeks (white parts only)
  • 3 sliced garlic cloves
  • 1 sliced yellow onion
  • 3/4 lb carrots, cut into pieces
  • 3/4 lb red potatoes
  • 1 lb quartered turnips
  • 2 lb green cabbage, cut in 6 and secure with toothpicks
  • salt and ground black pepper to taste

Preparation (instructions)

  1. Place a deep casserole dish on top of the stove and stir in beef, beer, water, peppercorns, bay leaves, parsley and salt.
  2. Meanwhile, heat oil in a frying pan and saute leeks, garlic and onion for several minutes and stir into casserole.
  3. Cover pot and simmer for 3 1/4 hours.
  4. In the last 30 minutes, add in carrots and potatoes.
  5. In the last 10 minutes, add in remaining ingredients.
  6. Serve hot.
