Irish champ (poundines) recipe

Ingredients (nutrition)

  • 1/2 pt milk
  • 1 cup chopped spring onions
  • 4 lb peeled and cooked potatoes, mashed
  • 1/2 cup butter
  • salt and ground black pepper

Preparation (instructions)

  1. Simmer milk and spring onions for 4-5 minutes.
  2. Add mashed potatoes, 1/2 the amount of butter, salt and pepper into milk mixture.
  3. Pile potato mixture on a serving dish and make a well at the center and add remaining melted butter in it.
  4. It is served with a spoonful of mashed potato dipped in the melted butter.
