Irish potato cakes (boxty) recipe

Ingredients (nutrition)

  • 1 cup flour
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons salt
  • 1 cup drained and grated raw potatoes
  • 1 cup leftover mashed potatoes
  • 2 lightly beaten eggs
  • 1/4 cup milk
  • vegetable oil for frying

Preparation (instructions)

  1. In a large mixing bowl, whisk flour, baking powder and salt.
  2. Combine into grated potatoes, mashed potatoes and eggs.
  3. Add in milk and mix well.
  4. Heat oil in a large heavy skillet and drop potato batter when oil is hot enough.
  5. Brown for 7-8 minutes.
  6. Serve hot with sugar if desired.
