Ingredients (nutrition)
- 4 sweet potatoes
- vegetable spray
- 3 1/2 tablespoons butter
- 2 teaspoons maple syrup
- 1/2 teaspoon grated nutmeg
- salt to taste
- 1/4 cup chopped walnuts
Preparation (instructions)
- Prick each potato with knife and coat lightly with vegetable spray.
- Place potatoes in paper towel in microwave and cook at high for 9 minutes.
- Preheat oven to 425 degree F.
- Remove potatoes and cut lengthwise.
- Scoop out the potato flesh using a spoon and place into a bowl. Reserve the potato skin.
- Add remaining ingredients in the potato flesh. Mix well.
- Return mixture into potato skin and transfer on a baking sheet.
- Bake in preheated oven for 13 minutes.
- Serve immediately.
