Maple stuffed sweet potatoes recipe

Ingredients (nutrition)

  • 4 sweet potatoes
  • vegetable spray
  • 3 1/2 tablespoons butter
  • 2 teaspoons maple syrup
  • 1/2 teaspoon grated nutmeg
  • salt to taste
  • 1/4 cup chopped walnuts

Preparation (instructions)

  1. Prick each potato with knife and coat lightly with vegetable spray.
  2. Place potatoes in paper towel in microwave and cook at high for 9 minutes.
  3. Preheat oven to 425 degree F.
  4. Remove potatoes and cut lengthwise.
  5. Scoop out the potato flesh using a spoon and place into a bowl. Reserve the potato skin.
  6. Add remaining ingredients in the potato flesh. Mix well.
  7. Return mixture into potato skin and transfer on a baking sheet.
  8. Bake in preheated oven for 13 minutes.
  9. Serve immediately.
